How can I tell if my grilled fish is done?
Even expert grillers can have a tough time gauging doneness of fish. If grilling fish with skin on it let the skin brown and begin to pull away before you turn it. Grill fish until just opaque, it will continue to cook after it's removed from the grill and will be over cooked if you wait to remove it when it looks dry. The easiest way to tell if your fish is done is to poke a fork into the thickest part of the fish, if the fish flakes, it is done.
